The most common dessert in almost every celebration these days is CAKE.  Its evolution, however, began centuries ago. The ancient cakes were totally different from the modern ones. Those days they looked more like bread wherein the honey would have been the ingredient for sweetener. Taste enhancers would be due to added nuts and dried fruits.

Slight improvement over this basic version was done by the medieval European bakers. They baked cakes which would last longer. And so was the invention of fruit cakes and ginger bread.
The modern cake, with round shape and icing, was first baked in mid 17th century in Europe. Thanks to the then modern technology of better ovens, molds and refined sugar. Icing sugar was soon formulated using the new version of white sugar.

In mid 19th century, another prime ingredient, baking soda, and baking powder got contrived. These were more effective raising agent over yeast. These helped bake better quality cakes.

Since ancient Roman times, cakes got associated with birthday celebrations. In the 1400s, the special birthday cakes got sold by the German bakeries. Since the 17th century, the birthday cakes took contemporary form.

In Ancient Greece, people brought cakes adorned with candles lit on it, to the temple of Artemis, goddess of the hunt. The colorful candles were lit to make them glow like the moon, a popular symbol associated with Artemis. Since then came the concept of birthday candles. While few believe that the concept began by the Germans in the 1700s.

Ancient Romans followed a tradition where bread was broken over the bride’s head to bring good fortune to the couple. In 1882, the modern wedding cakes first originated at the wedding of Prince Leopold, Duke of Albany. It took another 20 years to come up with multi layered cakes.


The innovation of cupcake can be traced as past as 1796 when a recipe notation of “a light cake to bake in small cups” was written in American Cookery by Amelia Simmons. However, in the 19th century, it evolved in the US and became revolutionary because of the less time it consumed to prepare. In today’s culinary world, cupcakes have become a pop culture trend. Google states “cupcake recipe” search has increased rapidly.
